For the test:

  1. Kefir 200 ml
  2. Salt 1 tsp no slide (to taste)
  3. Soda 1/2 tsp
  4. Flour 200-250 gr (how much dough will take)

For filling:

  1. Minced meat 500 gr
  2. Onion 1 pc.
  3. Cilantro 10-15 gr
  4. Peppermint 10-15 gr
  5. Salt to taste
  6. Black pepper to taste

For lubricating flat cakes

First I add soda to kefir and leave it for 5 minutes so that they become friends and a reaction occurs between them. I add salt to kefir and partly add flour. It is necessary not to overdo it with flour, the dough should remain soft and slightly sticky, knead the dough for 5-7 minutes. Leave for 30 minutes to rest the dough, the gluten is swollen.
Grind meat, onions in a meat grinder. Finely chop the herbs of cilantro and mint, add to the minced meat, salt, pepper and mix.
From the dough and forcemeat, form 8 balls each (the weight of the ball of dough I got 60 grams, and meat - 70 grams)
Roll out a little ball of dough, put in the center a ball of minced meat, fasten on top. Leave on for 10 minutes.
Gently form cakes with a diameter of 12 cm with your hands.
Fry until golden brown in a dry frying pan over medium heat. Each cake is generously greased with melted butter.
