Ingredients

  1. tomatoes 3 kg .;
  2. plums 2 kg .;
  3. salt 2 tbsp .;
  4. sugar 8 tbsp;
  5. vinegar 9% 6 tbsp;
  6. garlic 12 cloves;
  7. hot pepper 1 pc.;
  8. allspice 5 pcs.;
  9. cloves 5 pcs.;
  10. Provencal herbs 2 tbsp

half liter cans (6 pcs.), iron lids (6 pcs.), pan, spoon, soup ladle, meat grinder, grater

Cooking:

Prepare all the ingredients necessary for making the sauce. Wash the tomatoes, wash the plums and remove the seeds from them. Skip tomatoes with plums through a meat grinder. Place the rolled tomatoes and plums in a pan with thick walls, put on fire, add salt and sugar and boil after boiling for 20 minutes.
We will prepare other ingredients: we will rub the garlic on a fine grater or let it pass through the press, we will remove the hot pepper from the seeds and veins and cut into small strips.
In the boiled plums with tomatoes, add garlic, hot pepper, Provencal herbs, cloves and allspice and cook all together for another 10 minutes. Remove the sauce from the stove, cover with a lid and let it brew for 2 hours, so that all the spices give their flavor to the sauce.
Cooled sauce for a silky and uniform consistency, wipe through a sieve. Put the grated sauce on the stove and boil for 1 hour, add vinegar 3 minutes before the end.
Hot sauce is poured into clean sterilized jars and rolled up immediately. Turn the cans upside down and wrap them until they cool completely.
From the specified number of ingredients, 3 liters of tasty, healthy and natural sauce are obtained, without various artificial colors and other additives that the body does not need.
The resulting sauce is perfectly stored at home in the pantry.
