Ingredients for Making Turkey Dumpling Soup
- Turkey wing 1 piece (large)
- Onion 2 pieces
- Potato 4 pieces
- Carrot 4 pieces
- Celery Root 1/4
- Water 2.5 liters
- Salt 1 teaspoon
- Pepper 1 teaspoon
- Fresh parsley 3/4 bunch
- Eggs 2 pieces
- Semolina 5 tablespoons
- Salt 1 pinch
- Duck, goose or turkey lard 1 teaspoon
- Main ingredients: Potato, Onion, Carrot, Turkey, Semolina
- Serving 4-6
Saucepan, plate, fork, tablespoon, kitchen knife, cutting board.
Step 1: prepare the broth.
Wash the turkey’s wing and dip it into a pot of water.
Boil everything together and remove the foam on top to make the soup broth clear.
Peel and chop the vegetables into cubes or just small pieces.
Dip the vegetables in the soup and cook them with the meat. If the vegetables are cooked faster than the turkey, remove them with a slotted spoon and add a wing.
Step 2: prepare dough for dumplings.
While the broth is boiling, mix semolina with eggs, salt and melted fat in a deep plate. After stirring, let the semolina swell for 10 minutes at room temperature.
Step 3: Cook the turkey soup with dumplings.
Reduce the heat to a minimum, salt the soup and pepper to taste, and then add the dough for dumplings with a tablespoon. Scoop it with a spoon and lower it into the broth, helping yourself with another spoon.
Cook 10-15 minutes until the dumplings are ready. The dough should boil, swell and float.
Remove the prepared soup from the heat, season with finely chopped fresh parsley, add vegetables if you took them out earlier, and serve.
Step 4: serve turkey soup with dumplings.
Serve the turkey soup with dumplings as hot as the main course. No sour cream is needed for him. Unless you can salt and pepper it even if you like more spices. Great homemade family dinner.
