RECIPE PREPARATION Apple Crumble:

* At home, I prefer 100% full countertops. The same top comes out only with wholemeal wheat flour, or with a mix of wholemeal flours. For Breakfast we went for the 50% -50% option as a compromise solution for those who do not taste so much wholemeal flour.

for crumble

  • 30 g butter (+ 80%)
  • 25 g raw sugar
  • 25 g wholemeal flour
  • 25 g walnut kernels

for the filling

  • 150 g raspberries (I used frozen)
  • 2 medium apples, peeled and cut into pieces (I kept the peel, it depends on everyone what they want
  • the juice of half a lemon
  • 2 tablespoons raw sugar

I had 6 individual tarts, made in metal shapes. I have other silicone molds, bigger, for which the same amount of dough is enough for 4 tarts.

Method

The night before I made the dough. Alternatively, it can be prepared 1-2 hours in advance, to have time to stay cold.

I sifted the flours and put them in a food processor, along with the sugar, butter, ground walnuts and salt powder. I turned on the robot and let it mix all the ingredients until I got a sandy dough, close to the consistency of breadcrumbs. I added the eggs and started the robot to mix and, as soon as a ball of dough formed, which I turned over on a lightly floured surface, I wrapped it in cling film and put it in the fridge. At least 1-2 hours, it works overnight.

The next day (or in 1-2 hours), I preheated the oven to 180 degrees and took the dough out of the fridge. I unwrapped the food foil and put it all on a floured surface, because it's quite sticky. I also rolled a roll with which I spread the dough in a thin sheet (0.25-0.30mm) which I divided between the 6 tart shapes.

I pricked all the tarts with a fork and put them in the oven for about 15 minutes, until golden. I took them out of the oven (which I left turned on at 180 degrees) and let them cool until I finished making the crumble and the filling.

All the ingredients for the crumble & # 8211 cold butter, sugar, flour and walnut kernel & # 8211 went into the robot for a few tens of seconds, until a relatively homogeneous mix was formed, which I poured into a bowl and I put it aside.

In a medium saucepan, put on low heat, I put together all the ingredients for the filling and waited for the apples to soften and mix with the raspberries. If you use fresh raspberries, you will also need a few tablespoons of water in this process, which takes about 10-15 minutes. You can taste and possibly adjust the taste with an extra spoonful of sugar, I like it more sour and I preferred to use less.

I divided the mixture thus obtained between the 6 tarts. I spread the crumble on top and put them in the oven for another 10 minutes.

That came out, a rustic and tasty dessert, with a sense of home, which I like to eat hot and share with others. Have fun!
